Translation: Burrata = Buttered, Di Bufala = with buffalo milk

Description: Made from buffalo milk (not cow’s). The outer casing is solid cheese, while the inside contains stracciatella (cheese curds) and cream, giving it an unusual, soft buttery texture. It is typical of Apulia, in Southern Italy.

Aged: Fresh, not aged

Aroma: Clean

Flavour: milky, tangy (from the buffalo milk)

Caprese salad! Olive oil only, no balsamic vinegar. Serve at room temperature. You’ll recognize the cow’s milk version of this cheese on our ‘Nduja pizza.
